Recipe: Mayte’s Sopita de pasta

Ah! So simple!

This easy to make, broth-y soup holds tons of memories for my family. This is seriously a poor man’s (or a busy mom’s) comfort food. Once you get the hang of it, you can make this in less than 10 minutes.

++ I sometimes might add shredded, broiled chicken to make it dinner! We serve it as an appetizer, a main dish or a quick healthy “snack” .. when myself, my husband or my children are under the weather, this soup is on repeat!

This recipe serves 2

Ingredients

Olive oil

Pasta | small elbows

Tomatoes | I prefer Roma but any will do

Garlic cloves

Onion

Chicken Bouillon | Knorr in powder form if possible

Fresh Cilantro | for garnish and yumminess

Water

Measurements

1 tsp Extra Virgin Olive Oil

1/2 cup of small elbow pasta

1 1/2 tomatoes

3 cups of water

1/2 of a garlic clove

1/4 onion

1 tsp Knorr (maybe a lil more for added flavor)

1 tbsp finely chopped Cilantro

You will need:

1.5 qt or larger sauce pan

Blender

Let’s go!

In your blender add the water, garlic, onion, tomatoes and Chicken Bouillon powder

Blend

In a saucepan - 1.5 qt saucepan or larger, add olive oil

when its warm, add pasta

Toast the pasta but do not burn!

Once your pasta is toasted, add the mixture from your blender

Bring to a boil and check the pasta every 5 minutes.

When the pasta is soft, it’s ready!

Serve hot and add cilantro to the top.

Voila! That is it.
