Curtido (pupusas topping)
This pickled topping is easy and delicious for pupusas, tamales and an easy grilled chicken.
I may or may not eat this as a healthy snack all alone.
Look out for a few techniques in the pics below.
Ingredients:
1 Medium Cabbage
1 Large Carrot
1 Medium White Onion
1/2 tsp of crushed (crush with palm of hands) Oregano
1/2 cup Apple Cider Vinegar
Chile de Arbol (seeds optional for heat)
Salt + Pepper
Water
Large Jar with lid (ex. mason jar)
Lets go!
Use your veggie peeler to shred the cabbage
Peel the carrots and use grater to grate
Cut onions Julianne style
Run your peeled cabbage, cut onions and carrots under boiling water
Place in a bowl and mix together the vinegar, salt, cold water (1/4 cup), oregano, chile de arbol and bay leaf
Leave in refrigerator - overnight if possible
